Yellow Tomato Ketchup

These go in Bouquet Garni (make your own bag)

Procedure:

Place the whole cherry tomatoes, the onion, the garlic and the orange halves and the bouquet garni in a pot. Toast for 3-4 minutes. Add 20 ml of water so it doesn't burn. Cook until soft. Add water as needed, but do not let the cherry tomatoes burn.

Let it cool a little, remove the bouquet.

Blend everything, pass through a chinois.

Place the liquid obtained in a pan together with the nutmeg, chilli pepper (quantity optional) and mustard. Bring to the boil. The liquid must have a honey-like consistency.

At this point add the vinegar and sugar and continue cooking until you reach the consistency of ketchup. (At this stage you can adjust the quantity of vinegar and sugar). Add salt.

Cool.
